AIソムリエは「1滴・1分でワインの味と香りを定量化するダイヤモンドセンサー」です。

本製品にはExtenD社が開発したBDD(Boron-Doped Diamond / 導電性ダイアモンド)が用いられており、試験液を装置に投入するだけで、酒類の「指紋情報」を簡単に取得することができます。

発酵、熟成、産地、温度によって敏感に変化する酒類データをこの技術を用いて蓄積し、機械学習を用いて人間の味覚データと結び付けることで、酒類の味と香りの定量化が可能となります。

AI Sommelier is a "diamond sensor that quantifies the taste and aroma of wine in one drop and one minute.

The product uses BDD (Boron-Doped Diamond / Conductive Diamond), developed by ExtenD, to easily acquire "fingerprint information" of alcoholic beverages by simply feeding the test solution into the device.

By using this technology to accumulate data on alcoholic beverages that are sensitive to fermentation, aging, region of origin, and temperature, and by using machine learning to link this data to human taste data, it is possible to quantify the taste and aroma of alcoholic beverages.
